Old School


Kickin’ it old school was the theme of the day, starting with an eclectic mix of Michael Jackson hits and Disney classics on Station-mate’s music playlist. Not gonna lie, hearing a bunch of dudes singing “I’ll Make a Man Out of You” from Mulan totally made my day.


After devouring a hefty serving of chili and corn bread made by our Georgia-born Sous Chef S (apparently chili night is a big deal around here!), we tackled a fairly busy service, with a grand total of eight charcuterie boards. The worst of it was pushing out, I kid you not, FIVE of them in the span of 30 minutes. There were two for a party, which I knew about in advance. But shortly after those left, I got a few a la carte terrines followed by another board. I had barely finished slicing the terrines for it when a new ticket checked in… two charcuterie boards. Of course it would be a ticket that would dig me deeper into the weeds. It got to the point where I ran out of the large slates and desperately needed an alternate dish. Meat Guy had a free moment then and ran upstairs to fetch me an old version of the charc boards (see the picture above).
